Dock, transshipment, last mile — and how to document them.

Three points account for almost all temperature-related quality claims.
The loading dock
A container that has not been pre-cooled costs two hours at the top of the range from the moment it leaves.
Transshipment
Every break in handling must appear on the record, with a timestamp. Crimson grapes are the most sensitive: two hours out of range are enough to weaken the berries. Vine tomato tolerates the gap better, but loses shelf life.
